OK. If you would like to start your journey with a free, no-cook preserve which is ridiculously easy to make and fabulously elegant to serve Elderflower Cordial is perfect.
Take a look around the countryside or parks at the moment and you will see the elder trees coming into bloom with their incredible flowers. They are so, so pretty and packed with fragrant, yeasty pollen.
Now, I never make Elderflower Fizz or champagne as it is so volatile it can be too hard to handle, even for an expert. I always make Elderflower Cordial which you can dilute with sparkling mineral water or sparkling Prosecco. Once made, water bath it and give it a year’s shelf life - right around to next year’s flowers.
So keep an eye on the hedgerows - the flowers on my garden tree are forming but not opened yet. All this sunshine will accelerate the process though. I will put recipe links at the end of this so you can gather all of the other things you will need ( some sugar and lemons! ) Basically, you need to gather your flowers on a sunny, dry day, put them in a large bowl or pan with the cut up lemons and sugar, pour over boiling water and leave overnight. Bottle the next day. That’s it and if this is your first preserve it will feel like magic. I have put the recipe links below which explain the process.
